Andouille sausage is a cajun style sausage. It has a great smoky, and mild pepper flavor to it. Our Chicken andoulle sausage is made even juicer by adding pork fat from out pasture raised pigs. This sausage is fantastic on the grill, and is the sausage that is used in gumbo. Our favorite way to enjoy this is with pepper and onions, served over a bed of white rice.
